Program Description

COURSE INFORMATION

FYET: Sustainable Food at the Foothills of the Andes: Destination Peru (1 credit)

PROGRAM DESCRIPTION

This course will be an introduction to sustainable development in the context of agriculture and food systems. The class will cover how environmental, cultural, political and economic considerations relate across complex food systems, with a focus on the US and Peru. Throughout the semester, students will engage with issues of food sustainability in Charleston, as well as learn about Peruvian culture and development projects through our Peruvian community partner – Ka’Way Monti. When visiting Peru, students will have the opportunity to engage with the practice of sustainable agricultural development first-hand. In Lima, the class will get to know the country's urban culture and cuisine through tours and a cooking class, and meet with organizations and businesses that work in the field of sustainable development. In Huaraz, students will stay at The Hof eco-community and in a homestay one night, working with Ka’Way Monti’s community partners on farming and development projects. Here we will engage in conversations with the organization and locals while experiencing the rural culture of farming and hiking at the foothills of the Andes.

PROGRAM HIGHLIGHTS

PROGRAM REQUIREMENTS

-Participants must be first-year, freshmen students
-Students must already possess a valid passport or be eligible to obtain a valid passport
-Students must maintain a 2.5 GPA or higher
(When entering GPA for this application, freshmen are instructed to enter 0.0 until they earn a GPA after their first semester at College of Charleston)

-There are some physically demanding aspects of the trip:
1) Students will be traveling on long, overnight bus rides through the mountain regions
2) They will spend most of their days outdoors, walking, learning about agriculture, and assisting with work on local farms
3) Much of the trip will be located in high altitudes (12,000 ft/3,750 m), which can make physical activity more challenging
4) A day hike in the Andes foothills is an optional component of the program

Ms. Liza Wood is an adjunct faculty to Environmental Studies and has two Masters of Science in Sustainability Science and Policy from Maastricht University (Netherlands) and Organic Farming and Food Production (England). Her 2015 graduate research focused on agricultural science and the optimization of spelt wheat varieties in Greece, using various sustainable intensification methods. Her 2014 graduate research was done in partnership with the international development NGO, Solidaridad, assessing climate-friendly certification and developing strategies for sustainable adaptation to climate change for small-scale farmers. As an undergraduate in Biology and Political Science at The College of Charleston, Liza traveled to Southeast Asia three times, studying abroad and developing her research that focused on economic and political barriers for sustainable agriculture movements in northeastern Thailand. Throughout her studies, she has independently traveled and worked with farmers from various countries, including Thailand, the Czech Republic, Austria, and Hungary.
